We made about nine pints of roasted tomato sauce this week. The process involves coating halved tomatoes with tomato paste, herbs, and olive oil. Then they are put in the oven for 40 minutes at 450 degrees. Once done, they are combined with the roasted onions and garlic and blended together. We had the first taste last night on spaghetti and it was excellent.
