We grew several onions last year, but did not know how to dry them properly before storing. Their quality dropped off quickly because of it and we had to discard several. This year, we grew plenty and are properly drying them before storing them. We dried them on the trampoline in the sun for the last 5 days and then moved them to the pole barn to finish drying.
Our newest learning is that early onions are not good for winter storage. This should be obvious because they mature at the hottest time of the year and then cannot be kept cool enough without refrigeration. Next year, we'll know to plant only a few onions early (when everyone is rushing to get their onions into the ground) and wait patiently for early summer to plant so that they mature in late fall.
