A lot of stuff can be canned in one day. Once the water is hot, you might as well can a bunch as to can just one batch. Above is one day's worth of canning recently - peach goodies in the photo above. We also canned 12 quarts of dill pickles and 8 pints of sweet cucumber relish yesterday.
Looks like excess for sure, but it is relaxing to do once there is a process and it beats sitting in front of the television. It also doesn't hurt that the grocery bill is getting slashed and the food tastes great.
