The evaporator performed better than expected this year, but with a couple of engineering tweaks, it could do twice as well. Because it was so efficient, we'll tap twice as many trees next year, bringing our total to about 50 taps. Translated, that will equal about 500 or more gallons of sap in a normal southern Indiana season. That should make about ten or more gallons of syrup. We'll get even more than that if the weather cooperates.
