We decided to go ahead and try one of the Tennessee Sweet Potato Squashes even though a thumbnail test still showed a little penetration. It was very big and just fine. Mom cut it, scooped the seeds out, steamed it, puree'd it, then made bread and pie. Both were excellent. She even roasted the seeds and those were good, although some of the shells were a little tough. A little experimentation with the temperature settings on the oven ought to fix that.
